Beyond Hard Boiled Eggs

Eggs are incredibly nutritious. Just think, a baby embryo was supposed to consume that yolk to become a chick! (hmmmm, maybe you don't want to think about that :)

Tomato Sauce Poached Eggs

Hard Boiled Egg's are a simple way to enjoy an eighty or so calorie snack that will keep you going. But, they are a little dull on their own.

How do you make eggs interesting? Try poaching them in a tomato sauce. It is ridiculously easy and all it takes is a bit of planning. The planning thing can be difficult, I realize, but finding the time to cook is critical to healthy eating.

You can make 4 or more of these at once and then just store them in your fridge for later consumption. They keep really well with plastic wrap or in plastic bags.

These taste great cold, room temperature, or hot. You can shove them in your bag to take to work and heat in the microwave.

The key is to find a tomato sauce you like or make your own. Be sure there isn't any added cheese to your sauce or the whole calorie thing is destroyed. The tastiest ones are in the refrigerated section of the store, but they tend to be much more expensive than the jarred brands.

Finally, get your hands on some cute ramekins. These are incredibly elegant and give your snack an enticing lift above a bag of chips.

Presentation is important in your enjoyment of food. Think of all the lovely plates in an expensive restaurant, or on the Food Network.

Ramekins are versatile. You can use them to serve olives or pickles. If you have kids, giving them individual portions in these little bowls will motivate them to eat almost anything. And of course there is something that I will not mention on this site (creme brulee).

I found my ramekins at a thrift store because it seems to be one of those items that collect dust in people's cupboards. Check out the ones below from Amazon.


Tomato Sauce Poached Eggs Recipe

(serves 2)
1/2 cup pre-made tomato sauce
2 eggs
grated Parmesan (optional)

Preheat oven to 350 F. Put the tomato sauce in bottom of a ramekin or an oven-proof coffee cup. Crack egg on top of sauce and top with a little grated Parmesan. Place ramekins on baking sheet and bake for 20 minutes until the egg is cooked as much as you like it. If you like runny eggs you can take it out of the oven a few minutes earlier.

Love this idea, I have a egg blog planned this week. I love mini muffin tin frittatas and have to say love hard boiled eggs (with hot sauce).

Also think presentation is important- love what you say about ramekins, good post!

This looks really tasty. I'd use a little pizza sauce instead of tomato sauce for a little extra flavor.

I love eggs, they dont' like me anymore. I really like a good fritta or omlet. I have started eating more Eggbeaters. I have to watch my cholesterol now so I don't eat eggs very often.

I love eggs too but I've noticed after I eat over medium eggs I have a horrible burning sensation in my stomach. They don't bother me as much if I eat them hard boiled or scrambled. I too have been eating Eggbeaters in a whole wheat tortilla topped with some low fat cheese, salsa and avocado.

That's so interesting! I've never thought to make them that way.

My favourite way is poached on top of a slice of multigrain toast. I adore eggs.

This is pretty brilliant Lisa. And as usual, you write it up in such a way that I feel virtuous reading/enjoying your healthy food tips especially because you make me laugh so much.

I found I can make a "light" egg salad for sandwiches by mixing hummus into the crushed hard boiled egg with just a touch of olive oil and some finely chopped onion and/or celery. Good way to add some healthy fat and fiber.

Eggs do not raise cholesterol. The amount of cholesterol you have in your body is determined by heredity. What raises body cholesterol is saturated and transfats. The nutrition of a egg far outweighs any concerns about its amount of saturated fat.
