One of the biggest hits on Snack Girl has been the No Bake Brownie Balls.

They are simple to make, nutritious, and taste like a brownie! How can you go wrong?

Some of us don’t love chocolate desserts as much as we like lemon desserts. I know that because if I was on a deserted island and could choose either a lemon bar or a brownie as a treat - it would be the lemon bar.

What I have found is that if you add fresh lemon juice to the base of the brownie balls recipe, you get a lemony and sweet treat. My daughter said these were a little bit too lemony - but they were perfect for me.

You can find pitted dates and roasted almonds with no salt added in the produce section of your store. Wonderful Almonds sent me a bunch of their delicious almonds to try and they offer packaged roasted almonds with no salt added.

The sweetened coconut adds more texture and flavor to the dessert. Think of these as your answer to lemon meringue pie or lemon bars. These are much easier to make and hit that lemon spot.

I used my food processor for this recipe and I’m not sure if I would try it if I didn’t own one. If you don’t have one and you are serious about cooking, you should get one. They make a ton of jobs easier.

You will also need a way to juice lemons. I bought my little juicer at the supermarket and have been using it for years to make fresh margaritas lemonade.

Ingredients

1 cup almonds, roasted (no salt added)
1 cup pitted dates
2 lemons
½ cup sweetened shredded coconut

Instructions

Coarsely chop almonds in food processor. Juice the 2 lemons and add lemon juice and dates into the machine. Blend until a soft “dough” forms.

Put coconut into a small bowl. Using your hands, form little balls and roll them in the coconut. Eat now or refrigerate for later consumption.

Yum! These are similar to Lara Bars. I have been making homemade Lara Bars & freezing them til needed. My kids even love them! Here's the link to the recipe I have been using. But these sound delicious too & will be trying them out. Thanks for sharing!

Lisa - do you think this would work with Nutty Guys date pieces dusted with oat flour?

I've been getting my lemon fix by adding freshly squeezed lemon (1 whole) and lime(1/2) juice to a tall glass of water - no sugar at all, just some mint sprigs. Very refreshing and addictive!

I am allergic to coconut ( the only food I can't have) can I dust w something else?

love this idea! i think a tray of the choco and lemon would be awesome together. i have made the choco ones a couple of times and i like rolling them in powdered sugar but the sugar gets soaked up after a while and loses that pretty white "snowy" look after a while. the idea of using coconut is fantastic and i might do that to the choco ones, too! maybe roll some in some crushed almonds for the non-coconut lovers. mmmm.

I'm not a big fan of coconut either. I was originally thinking that rolling them in powdered sugar would be good. Then I thought, cocoa powder. Then I thought, why stop there... Roll them in mini chocolate chips or jimmies! However, I think @AngieM. is onto something there. Make a batch each of chocolate and lemon and then cut each ball in half and put one half of each together - kind of like a black & white cookie, then roll it in cocoa powder and chocolate chips. :) (I think I might be hungry)

Gnu foods discontinued their Lemon Ginger fiber bars, so i was contemplating a replacement recipe. i think this would do the trick! i'll add freshly grated ginger and some flax seeds but leave off the coconut (don't like it). thanks for the recipe!

Sounds great...I have made almond balls before but never with lemon. I will also try it with roasted almonds. I typically just use raw almonds.

These are great frozen! They stay soft on the inside too so you don't have to wait for them to thaw. Refreshing treat!

How well do these hold up at room temperature?

I love these! I substituted sunflower seeds for almonds (we're nut free) and added some lemon zest for an extra zing. Delish, and thank you for sharing the recipe!

Sunflower seeds are a genius substitution! I have a huge bag (salted ... Maybe I'll give them a quick rinse)

I'm a teacher so I need nut free options for my work snacks.

As a bonus, I have sunflower seeds already, and I'm almost out of almonds. Time to get some dates and start (non-)baking.
