Stuff It! (I'm Talking About Mushrooms, Of Course)

Incorporating veggies into parties can be ridiculously easy if we set our minds to it. Of course, it takes prep time and shopping, but your guests will be so grateful when they show up and the Potato Chips are missing.

Stuffed Mushrooms

Stuffing mushrooms is really fun and the results are delicious. It is a multi-step process, but the actual cooking step isn't very long. You can make them ahead and just pop them in the oven when your guests arrive.

I made these that crab meat that I received from Phillips Foods. I used claw meat which only cost $6 for 8 ounces and it was really delicious. The crab makes a more sophisticated party snack, and it tastes really delicious without many calories.

The best part of making stuffed mushrooms is preparing the mushrooms. After you wipe the dirt of with a paper towel (do not put them under running water because they will absorb it), you can turn the stem and it will POP! right out of the top. It actually makes a little pop! noise.

You can use either bread crumbs or Panko. Panko is a Japanese bread crumb which is very light. You can find it in the "Asian" section of your supermarket.

My kids enjoyed making these with me - they can pop! the mushrooms and put the filling in the caps. Unfortunately, they didn't like eating them. You can lead a horse to water.....


Stuffed Mushrooms Recipe

(6 to 8 appetizer servings)
24 medium white mushrooms
3 tablespoons bread crumbs or panko
2 tablespoons butter
1 medium shallot, finely chopped
4 ounces fresh crabmeat (claw meat)
1/4 cup grated fontina cheese
1/2 lemon
salt and pepper to taste

Wipe mushrooms with wet paper towel to clean off dirt. Pop the stems out of the caps and discard. Melt butter in small frying pan. Add shallots and cook until softened, about 3 minutes. Add bread crumbs to pan and then pour mixture into larger bowl. Mix in crabmeat, fontina, and squeeze in lemon juice. Taste and then add salt and pepper. Turn your oven on broil. Fill mushroom caps with crabmeat mixture and place on a rimmed baking sheet. (Can be refrigerated at this point for a few hours). Place baking sheet under the broiler for 3 minutes or until the cheese is melted. Serve immediately.

I have a recipe that calls for a mixture of chopped veggies, bread crumbs, and parm cheese. I usually substitute pecorino for the parm though.

Do you know the WW points on this? I thought you usually published the calories, fat and fiber on your recipes. This one caught my eye because I love all the ingredients that you have in it.

I love crab-stuffed mushrooms. Already on the menu for my sister's upcoming baby shower! Yum!

This is bad,so bad, but I love "popper" stuffed mushrooms - cream cheese mixed with crumbled bacon and minced jalepenos topped off with a sprinkling of gruyere (because my boyfriend is Swiss). I've also done "crab rangoon" stuffed with crab, cream cheese and sliced scallions after a light drizzle of teryaki in the caps. I do have one healthy recipe using artichoke hearts, crab meat and low-fat mayo, sprinkled with crushed cheese crackers. For all of these, I chop the mushroom stems and add them to the filling after a brief saute.

Easiest stuffed mushrooms ever. I dice the mushroom stems and add them to Pepperidge Farms stuffing mix. Then stuff the mushroom caps with the stuffing. Yummy and quick.

Yum! Every time I make sausage lasagna for the kids...I make extra filling for us to stuff mushrooms with...it's so easy, sweet italian sausage (cooked and drained) mixed with ricotta and pesto. My kids won't eat them yet, but one day....

would just wiping the mushroom w/ a wet papertowel remove all the dirt? I usually have to rinse and even sort of scrub lightly with my fingers all over the crannies and surface to get all the dirt off (and there's a LOT of it in the big pack that costco sells). would eating the dirt that came w/ the mushroom be bad for me? XD

I would suggest use running water to wash your mushrooms. You don't have to drown them but use some water and rub the dirt off each one. They don't absorb enough water to ruin the dish. You don't wanna eat the dirt. I've heard it is poop.

Stuffed mushrooms are delish although I don't use seafood or a lot of butter. some fresh diced onions, garlic and green pepper,and the stems sauteed in light butter with chicken broth and flavored breadcrumbs....yumm

i am very interested to learn and earn knowledge about mushroom based starters
