The Sweetest, Simplest Holiday Treat: Strawberry Santa Hats

If you think Snack Girl went a little crazy about Thanksgiving, wait until you see how she treats the December holidays.

Strawberry Santa Hat

Two years ago, I made adorable Santa hats with whipped cream. There were complaints.

Actually, there was only one complaint from a friend of mine and regular reader, Shanna. She made my Santa hats and then complained that they had to be consumed IMMEDIATELY or the top would slide off.

She was right about that. Here is the photo which went a bit viral:

Notice how the hat is already sliding off the strawberry as I am rushing to take the photo.

This is simply strawberries and canned whipped cream with some mini chocolate chips. They were a huge hit, but I had to agree with Shanna about their stability.

Last year, I went back to the drawing board and came up with the “new and improved” Santa hat. Again, people loved them! I used part skim ricotta cheese to make them more stable and it works!

The key to keeping the hat on is to slice the strawberry very straight so that the hat rests flat. If there is an angle, you will have hat slippage.

These are also simple to make (not as easy as the whipped cream version) and they will store in your fridge for a party. Just mix up ricotta, sugar, and vanilla and spread it on the strawberry.

I was able to find some tasty fresh strawberries in the grocery store, which was a surprise given that it isn’t strawberry season.

Ingredients

10 fresh strawberries
½ cup part skim ricotta cheese
2 tablespoons confectioners sugar
¼ teaspoon vanilla

Instructions

Hull strawberries and slice a small portion off the bottom so that the strawberry will lay flat. Mix together ricotta, sugar, and vanilla. Using a spoon, put filing between the bottom slice and the top slice. Add a dab of filling to the tip of the strawberry.

These can be enjoyed immediately or put in the refrigerator to be served later. These will last one day in the fridge.

I like the look of the open one with eyes better. Maybe a toothpick down the back will hold them in place (just worn guests! Lol).

What a great idea! I have several holiday parties, and I can easily see myself bringing these to ensure that there's a healthy dessert around

You could also put the filling in a ziploc baggy and "pipe" it onto the strawberries. I think you could get better control of it that way - especially the part where you have to put a little on top!

And these are using strawberries this season, coming from where to North America? You probably need that sweetened canned stuff to give them any flavor.

The hats are really cute and I bet they are even yummier with the ricotta cheese in there.

A little more work would be to make mini pavlovas.

Little round meringues with a Dan of whipped cream would make them more stable and add a nice crispy bite to it. .

These are so cute!! Do you think you could use marshmallow fluffy ... and the stickiness would offset 'hat slippage'?

I used mascarpone cheese an Italian sweet cream cheese that worked very well, and yummy!!!

I used tooth picks through the top and cover the tip with the pomp pomp of the hat. It didn't budge. Injustvwarned people they we held together with tooth picks to avoid injury.

I used cream cheese because it kept them together better and also has a good flavor.
