Smokeratoes: A Fabulous New Snack

Sometimes you have to open your eyes to what is in front of you. Recently, my vision changed in the canned seafood section of the supermarket. There was a product I had never noticed on my search for great tuna fish.

"Fancy Smoked Oysters", a mere $2 for a can, hit the bottom of my cart with a clunk. A Snack-Girl reader had contacted me with her questions about them. I happen to love oysters, so I was happy to take a look.

The nutrition facts on the package are pretty outstanding. Only 120 calories, and you get 10g of protein and 70% of your daily value of iron. Wow!

But, they are a bit slimy and funny looking. They also have a very distinct flavor and while I could see eating a few with a cracker, I knew I had to find something to make them really pop.

Cherry tomatoes are delicious all on their own. They are sweet and a great size to pack in your lunch for a pick me up. Add the oyster and you combine the sweetness with the smokiness and saltiness. Super yum! (The oysters also photograph MUCH better with the tomato :)

I had to create my own word to express the yumminess: Smokeratoes!!

They can be served at room temperature and would make a fabulous party snack. I'm not sure if kids would like them. My kids ran the other way. Oysters are a wee bit strange.

The serving size here (3 smokeratoes) will give you about 25% of your daily value of iron. I know the women out there who read this site have trouble getting iron - so eat up!


Smokeratoes Recipe

(makes 15)
1 pint cherry tomatoes
1 can smoked oysters

Wash tomatoes and using a knife, cut down half-way toward the bottom. Cut oyster in half and stuff into tomato. This can be a bit messy - but you will get the hang of it.

Three Smokeratoes = 44 calories, 3.6 g fat, 0.8 g carbohydrates, 4.4 g protein, 0 g fiber, 64 mg sodium, 1 Points+
