The Easiest, Healthiest Dip For the Big Game

I couldn’t go into this weekend without making one more dip. Hey, when the Patriots win, I want to be celebrating in style.

Salsa Corn Dip

This is crazy easy. My 10 year old daughter can make this and will eat it too.

I saw a version of this dip on the Weight Watchers website and I almost couldn’t believe it would be good. It is called “Fiesta Dip” and it features fresh salsa that you can buy at the supermarket. I find this salsa in the produce section and I buy the mild version.

The fresh salsa is a supermarket brand and has no salt added to it and a very clean ingredient list.

This dip is a whole lotta vegetables and a wee bit of cheese. It works because the salsa and corn are so flavorful that a ton of cheese isn't necessary.

You have no excuses for not making this dip. Do NOT simply open a jar of salsa with chips – this dip is SO much better.

Fiesta Dip Recipe

Makes 10 – ½ cup servings

Ingredients

1-16 ounce bag of frozen corn
1-16 ounce container of fresh salsa
1 cup grated pepper jack cheese
1 chopped scallion (optional)

Instructions

Thaw corn via package directions. Mix corn and salsa in a small bowl and spread into a 9 –inch pie plate or other type of serving dish that is relatively flat. Top with grated cheese and heat in the microwave on high for 2 minutes until cheese is melted.

Top with scallion bits and serve.

Yum + Easy = touchdown in the recipe box! I made it for a mtg today and it is delicious. If you like tweaks, here are mine: Trader Joe's Roasted Corn, lime, cumin, cilantro. I also had chopped peppers on hand, half a can of black beans, and some cooked barley. The last ones add calories, but are tasty.

Sounds delish...might have to rename it Seahawks Salsa Dip when we take the Superbowl home...again!!!! :)

I dont even need the cheese! Instead I throw in some black beans...Heaven

What would you suggest for a corn substitute?

@Katrina - I would suggest black beans. It will bring up the calories a bit but the nutritional value would still be high.

I suggest diced bell peppers in place of, or in addition to, the corn.

What about chopped avocado?

This looks really good. Will try. However, I wanted to comment on the Easy Creamy Tomato soup recipe you posted earlier. It is fantastic and so easy! Thank you. I added a little sugar to cut the intense tomato taste and some basil along with salt (lots of salt) and lots of pepper. Very easy, really good. Will be adding it to my soup recipes.

Mmm this looks yum! I'm not sure we have that type of salsa in UK (or Super Bowl:) but I guess I could just chop up some tomatoes and jalapeños? I've also learned what a scallion is - called a spring onion in the UK :)

With hopes that one can find organic, non GMO corn. Corn has been one of the biggest victims of Monsanto getting into our food supply. yuk.
