The Cutest And Healthiest Holiday Party Snack

Last year, I made adorable santa hats with whipped cream. There were complaints.

Light Holiday Snack

Actually, there was only one complaint from a friend of mine and regular reader, Shanna. She made my santa hats and then complained that they had to be consumed IMMEDIATELY or the top would slide off.

She was right about that. Here is last years photo which went a bit viral:

Notice how the hat is already sliding off the strawberry as I am rushing to take the photo.

This is simply strawberries and canned whipped cream with some mini chocolate chips. They were a huge hit, but I had to agree with Shanna about their stability.

This year, I went back to the drawing board and came up with the “new and improved” santa hat. I used part skim ricotta cheese to make them more stable and it works!

The key to keeping the hat on is to slice the strawberry very straight so that the hat rests flat. If there is an angle, you will have hat slippage.

These are also simple to make (not as easy as last years) and they will store in your fridge for a party. Just mix up ricotta, sugar, and vanilla and spread it on the strawberry.

I was able to find some tasty fresh strawberries in the grocery store, which was a surprise. They are from Mexico and did not taste like styrofoam. I hope you are as lucky.

Santa Hat Recipe

Ingredients

10 fresh strawberries
½ cup part skim ricotta cheese
2 tablespoons confectioners sugar
¼ teaspoon vanilla

Instructions

Hull strawberries and slice a small portion off the bottom so that the strawberry will lay flat. Mix together ricotta, sugar, and vanilla. Using a spoon, put filing between the bottom slice and the top slice. Add a dab of filling to the tip of the strawberry.

These can be enjoyed immediately or put in the refrigerator to be served later. These will last one day in the fridge.

Maybe if you don't slit the strawberry all the way through the back will act as a hinge. Just a thought. I may try these this year because they really are so cute.

Why can't you get stick a toothpick through it? The hat would not move and it would be easier to eat as well.

These are great! They are bite sized so no problem with the sliding hats...just popped them right in the mouth!

A small green toothpick through the top keeps the Santa together... and makes an easy way to pick them up :)

The revised version is super cute - cuter than the original I think. Maybe I'll have to try this new recipe if I can find decent strawberries. Thanks. :D

How clever! Using some of the toothpick ideas above to prevent slippage...You could put a toothpick through the top point of the strawberry with a mini-marshmallow on the end to act as the pom-pom. You could also use a a white-chocolate chip or any white candy. I love these and will definitely be trying them!!!

If you wanted to just use whip cream that would not deflate, you can take heavy whipping cream and add the sugar to it and mix; put in refrigerator for at least one hour before whipping. The whip cream stays and does not deflate. Just after making them, keep in the refrigerator until ready to serve. Also, you could use blue berries for the eyes.

I'm going to try them with vanilla Greek yoghurt. I might mix in some shredded coconut. Such a cute idea. Thanks!
