Super Easy Homemade Spaghetti O’s

Snack Girl rarely eats her pasta from a can. Pasta is one of those foods that is ridiculously easy to cook.

Can you boil water? Yes? Then, you can cook pasta.

I probably shouldn’t call this recipe “Homemade Spaghetti O’s” because that will turn some of you off. Because of the tomato, beef, and pasta combo it resembles Spaghetti O's, but mine has a few more ingredients. And, I might mention, tastes pretty good.

I have bulked it up with onion, celery, and carrot. Also, I didn’t take the time to make meatballs because I am lazy. Think of this as a quick pasta dish that will keep the hungry hordes silent. My kids did like this very much and asked me to make it again.

This recipe uses one saute pan (one pan to clean!) and it can be done in about 30 minutes. The only catch is that you have to be careful when you buy a jar of tomato sauce. Do not purchase the ones with added cheese or sugar. I am planning to do a post on jarred tomato sauce because I have tricked SO MANY TIMES. argh.

Homemade Spaghetti O’s Recipe

Makes 6 servings, 1 ½ cup per serving

Ingredients

8 ounces ground beef (85% lean)
1 onion, chopped
1 carrot, peeled and chopped
1 celery stalk, chopped
1 garlic clove, minced
1 jar (24 ounces) tomato sauce
1 cup water
1 cup macaroni or ditalini (4 ounces)

Instructions

Heat a very large skillet (a deep 12-inch skillet) over medium high heat. Add the beef and cook until browned (no pink remains). Put browned beef into a strainer and allow the fat to drain off.

In the same skillet, saute the onion, carrot, celery, and garlic until the vegetables have softened, about 7 minutes. Add the ground beef, tomato sauce, and water to the skillet and bring up to a simmer. Add the macaroni, stir, and cover. Simmer until the macaroni is tender about 8-10 minutes.

The coolest part of this is that you can cook the pasta right in the dish!! Because, even though anyone can boil water, who wants to wash the pasta pan??

Now these are spaghetti O's I can get into! :) Love the recipe!

I do basically the same thing only add about 1/2 cup of ketchup and call it goulash.

I can't wait for the post on jarred pasta sauce! We use Prego Marinara. I actually always preferred the taste of it, but when I was looking for a good sauce for the kids I noticed it has no added sugar. All of the other reasonably priced brands have added sugar or cheese. This looks delicious! I wonder if it would come out good with whole wheat macaroni!

I use Turkey meat because I don't eat beef. I also add fresh spinach to it.

I can't wait for the post on jarred tomato sauces. Being on WW I find it hard to find a pasta sauce that is low in points that I like. Additionally I can't eat any of those artificial sweeteners which limits my choices. I can't even think about eating the canned spaghetti o's, but I think I will try this recipe for homemade.

Very cool, but I'm vegetarian and wouldn't use beef- I wonder if mushrooms or extra veggies would be a good sub.

I'm interested on the sauce article, too- I use seasoned canned crushed tomatoes instead of jarred sauce- it seems to have no added sugar and additives, etc. i'm always worried about BPA though.

I don't buy jared sauce at all...I make a huge batch of sauce when I have a free day and am in the mood. It consists of just crushed organic tomatoes and tomato paste, lots of seasonings including a meripoie? carrot, onion, and celery. Simmer all day and then freeze one meal portions.

My grandmother made a version of this dish called goulash but growing up I heard this dish called American Chop Suey which is what I call it. The differences are minor in effort but major in flavor and nutrition. I use pastured beef and organic vegs when possible, including green pepper, onion, celery and 1 garlic clove. I haven't found a healthy version of Delmonte stewed tomatoes so I still use those, about 1 can per lb. beef, plus 1 tbsp paste. I blenderize the st. tomatoes first. I also cook my sm. elbows separately and throw them in at the end. It's still a very easy spoon-friendly dish that makes a ton of comfort food [freezes well too]. I love this dish any time of year! If anyone hasn't tried ACS, the internet has many versions. :)

Barbara.....I'm with you! In the summer when fresh tomatoes r available, I too make stewed tomatoes with

mirapoix! Freeze in pints and quarts. [Also marinara or just plain crushed tomatoes!] There are times when Delmonte's stewed tomatoes r just calling me and no defrosting! I wish they would get with the times and use bpa-free cans and sugar vs. hfcs, arghh! they are the worst thing in my pantry and I feel guilty when I grab them. :(

Why wouldn't you use the extra lean (93-96%) lean ground beef or the 100% ground turkey instead of the 85%. Then no draining is necessary and it is so much lower in saturated fat!

I notice the recipe calls for "tomato sauce" not tomato pasta sauce. Here in the U.S. "tomato sauce" means just tomatoes and nothing else added.

With that, one can always add herbs and spices to taste. I often don't add anything.

Use the alphabet shaped pasta from Earthfare stores for a more "O" styled experience... OK, a-e-i and u as well.

Okay I made this and doubled the veggies and made little meat balls using organic meat. Loved it.

I made this about a year ago from another blog and boy it was sooooooooooooo GOOD!!!!!! I loved it!
