The 10 Best Summer Salads & Snacks

Summer is the BEST season for salads and snacking. Snack Girl is so inspired by all the fruits and vegetables that are in season.

Healthy Summer Snacks and Salads

In fact, I found myself with writers block in January when there was like 30 feet of snow piled outside my window (slight exaggeration). Back then, I liked writing about cookies.

The best snacks for summer are simple: watermelon, peaches, strawberries, blueberries, tomatoes, etc. - just munch on them!

For the folks on a tight budget, summer is the season where you find your bargains on fresh produce. I bought an ear of fresh, sweet corn for 17 cents yesterday. Is that crazy? For only 63 calories per cob, this food is so dreamy.

These recipes are for those of you who want to dress your summer fruits and vegetables up a bit. A few added ingredients, maybe a little heat, and you have healthy food that is tasty.

I would alter the green smoothie recipe and use FRESH berries (because they are cheap) instead of frozen. This recipe is great for summer because it is refreshing and doesn't have any dairy.

I am a Jello Junkie! I layer Jello with whatever fresh fruit is available.Before serving it I crumble about 1 T of fresh goat cheese on top.Oh Boy is it good. Oh, I use sugar free Jello.

I love WATERMELON! It's so refreshing. I pureed watermelon with honey and mint. It made great Popsicles. I am also going to try dehydrating watermelon. It turns into a chewy, sweet candy. Next on my list is going to be watermelon fruit roll-ups. There is so much you can make with watermelon!

I just want to eat cookies in January, too. In the summer, I rarely even have the desire because it makes me feel so heavy. I crave fruit and veggies. Sweet corn is early this year, at least in Oklahoma, so it is available right now!

Like the jello junkie, I'm a blender junkie! :) Whatever fruit is the freshest and the most available in the summer, I buy and throw into the blender with greek yogurt, honey and skim milk! Even my ice cream lovin husband looks forward to drinking a glass of these smoothies every night. So refreshing and good! Nice to take advantage of summer fruits, especially when you live in the midwest.

I love grilled pineapple -- but I just heard that some people grill watermelon, too! Have to remember to try that one

17 cent corn at Stop & Shop? I got that sale too! I LOVE summer fruits. I'm trying to grow strawberries at home for the first time this year. Nothing is ripe yet, but I just hope they taste okay. One of my favorite summer fruit salads is with strawberry, kiwi and banana together. Sweet, tart and well, bland I guess. They taste great together though. I can't wait for peaches and nectarines and plums to show up. YUM!!

was looking through these and found a reference to 'just 4 points plus (or 5 or whatever)'. I think this system (by whom? Weight Watchers?) is just another gimmick to get you to pay attention to the left hand while the right steals your wallet. In what way does this program help differ from the food pyramid that changes weekly or any other blanket system that allows people to stop thinking critically and just trust what they're told? Sorry for the diatribe, but it had to be said. And if WW is somehow helping you feel free to make your own choice...after all, I'm just another opinion.

The watermelon and feta looks so appealing. Not sure I would like the taste, but I'll give it a try.
