The healthiest eaters among us incorporate vegetables or fruit in every meal. This can be tricky because vegetables take time to prepare.

Carrot, Raisin, Cream Cheese Bite

How many hours have you logged chopping up your veggies? One nice short cut to replace your knife and chopping board is a grater. Last week, the New York Times featured Great Tomato Dishes With a Grater and it got me thinking.

I own an amazing grater that my mother-in-law gave us (Thanks, Carol!) see below. It is RIDICULOUSLY fast in the kitchen for grating anything. It takes literally 10 seconds to grate a carrot.

So, I made these carrot, cream cheese, and raisin bites to eat as a snack. Before I started writing this website, I would have just had the tortilla and the cream cheese (boring...). Adding the carrot not only makes it tastes better, it makes it more beautiful.

The sweetness of the carrots and raisins are a nice treat and I adore making my food look like sushi. This kinda looks like sushi made by an amateur drunk sushi chef - but, hey, I'm not perfect!

This would be a great after school snack for kids or an after workout snack. Be aware that the entire tortilla cut up is going to set you back 200 calories so you might want to share this with a friend (or save half for later).


Carrot, Cream Cheese, and Raisin Bites Recipe

(serves 2)
1 whole wheat tortilla
1 tablespoon cream cheese
1/2 carrot, grated
10 raisins

Spread cream cheese on tortilla. Add grated carrots and raisins and roll up. Slice into 10 pieces and enjoy!

This looks so yummy! I have been struggling to incorporate veggies and fruits into every meal. We have really moved away from the three square meals a day into a menu more like the carrot/raisin/creme cheese roll up but I'm really stumped as to ideas. Thanks for this one!

I have to try this and pass it on to my co-workers. We're starting a weight-loss challenge in our office so this will be a great idea to share!

try using Whipped cream cheese. 2 tablespoons has only 60 cals.

Tried this at day care center during snack sampling day, where the kids (ages birth-9) get to try different kinds of snacks. I would say more than half of the kids liked it. Some asked for seconds and thirds! Personally, I think the wheat tortilla taste is a little overpowering, so maybe next time will try rolling it differently. It was unexpectedly sweet and I loved that! Will definitely make again for myself, if not the kids. Thanks for the recipe!

How many points plus (for Weight-Watchers) will this have per serving (5 slices) if I use fat-free cream cheese?

I always keep a bag of shredded carrots on hand, to throw into my lunch salads, that makes this even easier

I have not tried yet but if you juice this is the perfect use for the left over ground carrots !!!

So good!!! Grad some kale in as well! Adds protein and other nutrients, and you can't even taste it! Yum!
