Pineapples are in season right now and costing about $2 each in my neck of the woods. YUM!

Fresh Pineapple Recipe

In case you didn’t know, in Colonial times, sailors brought the pineapple home to New England, where a fresh pineapple displayed on the porch meant that the sailor was home from foreign ports and ready to welcome visitors.

If I put out a pineapple right now, I don’t think anyone would stop by - but you never know.

A large pineapple will produce about four large servings for dessert (a mere 50 cents each). I have advocated for canned pineapple because it is cheap and already cut up - but this time of year is a good one for the fresh pineapple.

First, you have to make friends with your pineapple. Grab a lovely green one and eat it soon after buying it - after you display it for all to admire.

"Look, ma! A REAL pineapple!"

Then, you have to get out a large knife and cut it up. Check out the video below from the Produce Geek:

Cut off the top and bottom - slice lengthwise into quarters - core - and slice along the spiky peel. I followed his directions and had 4 large hunks of pineapple in no time. If you practiced on a few pineapples - you could do this in a flash.

Now, I suggest tasting it. Is it sweet? The one photographed above was so sweet that I had trouble not eating it before shooting. It didn't need anything to be a great snack all alone (without adulteration).

If you find that it is too sour for you, then you can add some sugar to make it sweeter. I don't think that a little bit of sugar is a big deal when you are eating something as healthy as fresh pineapple.

I called this recipe "Pineapple Surprise" because it surprises me how easy, simple, and delicious a broiled pineapple can be :)

Ingredients

1 fresh pineapple
4 teaspoons dark brown sugar

Instructions

Core and peel pineapple into quarters (see above instructions). Heat broiler on high and put pineapple on a baking sheet. Heat for five minutes, remove from oven, and using a spoon rub one teaspoon of sugar onto each quarter.

Serve with fork and knife and enjoy!

I save the hard core from the middle of a fresh pineapple and freeze it. After I take it out of the freezer I make a few slits on the frozen core. When I make fresh lemonade, tea or some other kind of drink I put the frozen core in the pitcher. It doesn't dilute the drink like ice does and it gives it a pineapple taste. Many of my friends and family members are starting to freeze the core now. My freezer always has 4 to 5 frozen cores ready to use in a flash. I am thinking of asking my local grocery store to see if I can buy the cores after they have prepared the pineapples for their deli. Hope you try it.

LOVE fresh pineapple. It's great to put out when people do stop by in a dish along with pistachios - they are a yummy combination.

Kim thanks I'm gona try the core idea! I like to pick out a more golden pineapple if consuming right away. Whatever we don't eat I freeze in chunks and save for smoothies. Actually I pulled some out this morning for pineapple bacon pizza for dinner. I love cooked pineapple and one of my favorites is my grandmas pineapple gravy w/ham and mashed potatoes!

I buy pineapples alot too! The two ways I tell if its ripe is: does it smell fragrant and are the spikes sort of loose? So I buy it and might leave it on the counter for a day or two. Kim that is a great idea for the core [sometimes its so sweet and tender I eat that too] but freezing it for lemonade or even just flavored water is going to be added to my household too. Now about the peel, rather than toss it with all that juicy fruit in those hard-to-get nooks, I throw it out at the edge of my woods for the squirrels, chipmunks and birds. There is nothing cuter than watching little critters running off with their stash! Nothing goes to waste!

I love fresh pineapple as well. I freeze the cores for use on Smoothies. They are edible after all, just a bit fiberous. They give a smoothie great flavor, and a little extra fiber! That way you don't even notice the texture.

In South Africa they sell pineapple quaters on a stick and sprinkle them with curry powder. So you get a sweet and spicy snack. Delicious!!!

Try sprinkling a little bit of kosher salt on fresh pineapple instead of the sugar. It's incredible.

Just learned today it's okay if the pineapple is not organic. :)

Thanks for the reminder; I am sick of clementines and apples! Also a great tip on using the frozen core; I will definitely try that. Re: the recipe, I would think sprinkling on the brown sugar before broiling would produce a nicely browned and caramelized topping - just keep an eye on it so it doesn't burn!

I like to use pineapple in green smoothies. It really takes the "green" taste of the kale away for me.
