Watch Out Taco Bell - Here Comes The Snack Girl Waffle Taco

A couple weeks ago, Snack Girl flamed Taco Bell’s new waffle taco.

DIY Waffle Taco

I got a couple e-mails requesting that I try to make my own waffle taco. This seemed like such a good idea!

After creating the tacos using my favorite brand of toaster waffle (Van’s), I had a problem. How do I serve them? Taco Bell had molded its product so that you could pick it up. Mine fell apart and the egg went squishing out on the plate.

There are things called “taco holders” which I have seen in restaurants but these proved to be difficult to find. After many hours of searching (not really), I found a solution. Turn over a muffin tin and you have an instant Taco Waffle holder.

Genius!

Probably not genius – but this might get me a “Mother of the Year” recommendation. Okay, I will take “Mother of the Hour”.

This is delicious, easy, and fun. My version has 200 fewer calories, 24 grams less fat, and 200 mg less sodium than the Taco Bell version. I did leave off the cheese because I thought that was kinda gross.

Makes 2 tacos

Ingredients

2 Van’s Whole Grain Waffles
2 eggs
2 slices center-cut bacon

Instructions

Place waffles in toaster on a low setting. Cook bacon in a small frying pan until crispy, drain fat, and scramble eggs.

Place waffle in an upside down muffin tin and stuff with scrambled eggs and bacon. Serve immediately.

I made my own version of the taco waffle using one turkey sausage patty,egg beaters,eggo nnutrigrain waffle, and a sprinkle of light cheese. But I found a tip on a healthier way to cook bacon if bacon is used. Run the slices of bacon under cold water for a few seconds (This will prevenk shrinking) And place on a boiler pan (Be sure to cover the bottom pan with foil for easier cleanup & to capture grease,cook on 375 for 10 minuts (of course time depends on how well you like your bacon) Then pat bacon of excess greas. Putting the bacon on a boiler pan allows the grease to fall out making it a little lss fatty. Plus no grease popping on you and you can put the whole batch in at once.

LOVE this idea------but I can't find waffles without Soy. Any suggestions of waffle brands for people like me who can't have soy?

Thanks for an alternative!! My 14 yr old requested one from Taco Bell. He took one bite and this junk food lover thought it was so nasty and greasy, he didn't touch it again!!! I tried to finish it off since I hate to waste food, but it was indeed gross! Think I might give yours a try.

Lisa, this is pure genius! I can't wait to try it. For those of us who avoid dairy, wheat, and other common ingredients, here's an amazing homemade waffle recipe. I like to make them in advance and keep them in the freezer.

3 cups rolled oats, raw (For GF waffles, make sure they’re GF oats!! Oats are not inherently GF!)

1/2 tsp salt
3 cups cold water
1 1/2 tsp vanilla
1 tbs honey

3/4 cup raw cashews (works with walnuts or

almond butter, too)

Directions:

Dump everything in a blender, and blend all ingredients together until almost smooth.

Pour onto heated waffle iron that has been sprayed with a non-stick spray. Bake in hot waffle iron for 10 to 11 minutes.

Great idea! I will definitely try this. This would probably please both generations (my granddaughter and my husband)!

I make a double batch of homemade belgian waffles; flash freeze then bag up; I then toast them just like store-bought waffles, drizzle maple syrup, no butter, fresh in-season fruit, etc. For bacon after experiencing pretty much every method and bacon contraption, my favorite method produces the least fatty, most crunchy, and flat bacon slices. Oh, and zero-cleanup! Here it is: place 3-4 layers of paper towels on large dinner plate, lay bacon strips over p-toweling, a slight over-lapping is ok, cover with 3-4 layers of paper towels, microwave on high for 3 mins, peek, may add or change top toweling if vey greasy, continue 2min intervals [my microwave takes 6 to 7 mins total].

To make life easier I'm a huge fan of the freezer, so I put cooled bacon in a zipbag on freezer door, a 30sec zap to have ready-to-eat bacon!

Has anyone tried making omelets in the waffle iron? I think it might be a good compromise for those who avoid wheat and soy, but I haven't tried them yet.

LOL ! Lisa, This waffle taco looks great! I avoid carbs, but this looks delicious not greasy.

Sometimes, I make an eggy crepe instead of an omelette which makes a good wrap too. I just add a tablespoon or two of flour to the beaten eggs. You could do the same for the waffle. Just use chickpea flour or almond meal instead of wheat flour if you are gluten free.

OMG, I have seen the commercials for Taco Bell's breakfast but have yet to try it. I love that I can make a healthy version at home, brilliant!

How many of us had done something like this since you were a kid possibly late to school or some other function? Lol. This wasn't knew to me, so it's funny to see people all a flutter about it running to taco bell for it. Great recipe. My only change is making the waffle myself. I would make a few of them wrap them up and put them in the freezer, then just put it in a toaster or microwave when I want one.
