Celebrating Easter? Wow Your Family with This Luxurious Low Cal Dip

Easter is around the corner, and for many it is a time to get together with family and share a BIG meal. What can you make that will be both luxurious and keep you from unbuttoning your pants?

Crab Dip

How about a crab dip? Crab is naturally low in calorie and tasty - I used it in crab salad earlier in the month for delicious results. This recipe is even easier (no chopping required) and is surprisingly luxurious.

Using a combination of Neufchatel cheese, and salsa, the dip is creamy and nutritious. Neufchatel cheese is a lower calorie cousin of cream cheese and can be found next to it in your dairy section. Use fresh salsa (not the jarred kind) with your favorite level of spice.

How do you keep the cost down? Use CLAW crab meat, not jumbo lump crab meat. Claw meat is cheaper (and blue) and very tasty but not as pretty as jumbo lump crab meat. No one is going to notice because you are putting it in a dip.

For a mere $6 for 8 ounces of crab meat, you can make a dip that serves 8 people. When I made this dip, it was a hit and I still had a bunch left over.

Salsa and Crab Dip

(serves 8)

1 (8 ounce) package Neufchatel cheese
1 (8 ounce) packaged claw crab meat
1/2 cup fresh salsa
juice of one lemon

Soften Neufchatel cheese in microwave. Mix ingredients in a small bowl. Adjust flavor (needs salt? more lemon juice?) and serve with sliced raw vegetables, crackers, or small squares of whole grain bread.

My favorite Easter tradition is finding my Easter basket! Even to this do, my parents will put together and then hide an Easter basket for me. Instead of candy, my mom usually includes a few gift cards and some specialty foods that she'll know I'll love.

I love going to church on Easter and hearing the drums and horns. I also love to go out for brunch with my family and see the kids hunt for their Easter baskets.

That sounds wonderful! I'm going to have to make some of that for Easter.

I loved going to my grandmother's for Easter and looking for Easter eggs when I was little. Now our family tradition is to all pile into my parents house for an extended family Easter Dinner. It's so much fun and a great time to catch up with everyone.

I remember fondly getting all dressed up spring style - fancy hat and all for church. Bright and festive was the theme! The frillier the better!

My favorite Easter Tradition is the Easter Egg Hunt - I'm 23 and it never gets old!!

My favorite Easter tradition is going to great grandma's for brunch and eating her tasty homemade Easter cookies! Always a hit and nothing compares!

I love that my aunt makes the same meal ever year. Ham, mashed potatoes, baked beans, rolls. Nothing ever changes but that is part of the fun of it!

My favorite Easter tradition is eating candy for breakfast. It's the one time of the year it's allowed. I'm 24, and I still eat candy for breakfast on Easter. I even have my mom "make sure that the Easter Bunny mails me my basket."

But I would gladly exchange my candy for some crab meat!!

Looks delicious! Best Easter tradition: When I was younger by grandmother would hide coins and candy in plastic eggs and we would hunt them. One special egg though had $10! So my cousin and I would conspire to find it and split our prize. Fun Times!

My favorite Easter tradition is getting dressed up in a brand new Easter outfit every year. I couldn't wait to get into those clothes.

Every Easter we have a brunch- and this year, I'll introduce some Historical recipes from the 1800's!

My favorite Easter tradition is baking a lamb-shaped cake. I use a 3D pan and decorate it so it looks as if the 'lamb' is resting in a meadow.

Each year I try a variation of recipes and decor. One year it was a chocolate-fleeced lamb. Another year, he was coated in marshmallow buttercream. This year, he will be decked out in white chocolate buttercream and white chocolate curls!

Of course, my lil' lamb is always a hit with the entire family. The hardest part is keeping the little ones' fingers from swiping samples!

Yum! Crab Dip!

My family's favorite Easter tradition is smashing Cascarone's. They are colored eggs that are blown out and then filled with confetti. When you break them the confetti goes everywhere. Definitely an outdoor activity! My MIL sends them to us from San Antonio every year.

Easter is celebrated with a delightful fluffy Crab Shrimp and Provalone cheese omlette,created from Phillips Crab Claws and shrimp for our main course brunch.

A late supper, proceeded by Phillips crabmeat and shrimp cocktail. We do not eat any "meat" only shellfish, fish and eggs as our animal products.

I will begin a new Easter tradition by creating deviled eggs and crab, with a dash of chipotle added to the mayonaise.
