Chocolate Brownie Cookies Made With Black Beans

I can’t get enough of putting beans into baked goods.

Whenever I see a recipe using beans, I HAVE to try it because so many of them have been successful.

Let us not speak of the ones that fail.

This one is a real surprise because you might think that “bean” cookies would come out like hard like a brick or taste a bit bean like. Nope. They are light and fluffy.

Beans give these cookies fiber, protein, and potassium which can't usually be found in regular cookies.

One of the keys to success here is to use canned black beans with no salt added. I found these in the supermarket and when you puree them – the beans are very bland. I believe this is why you don’t detect a flavor.

I used a food processor to make these so these are both fast and delicious. A blender isn’t going to work because the food processor turns the beans into a dough.

These do not taste like peanut butter either. They taste like chocolate!

Chocolate Brownie Cookie Recipe

Makes 24 cookies

Ingredients

1 15-ounce can no-salt-added black beans, rinsed
2 tablespoons peanut butter (or other nut butter)
2 tablespoons butter, melted
3 tablespoons whole wheat flour
¼ cup unsweetened cocoa powder, preferably dark
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
pinch of cinnamon
1/3 cup bittersweet chocolate chips

Instructions

Preheat oven to 375 F. Blend black beans, peanut butter, and butter in a food processor until beans are pureed. Add flour, cocoa powder, sugar, baking powder, vanilla, salt, and cinnamon and mix until a dough forms.

Stir in chocolate chips by hand and spoon onto baking sheet in 1 tablespoon size drops. Bake for 10 minutes until firm.

These sound great and can't wait to try them. I recently made a batch chocolate chip cookies with an entire can of chickpeas! They turned out great and the kids ask for them in their lunch.

These sound good! Haven't got on the "baking with black beans " wagon yet, but these will be my start! Michelle, can you share your successful chickpea cookie recipe?

I would like the recipe for the chocolate chip with chick peas please

I haven't tried baking with black beans yet, but I make a mock pecan pie with pinto beans that's really good. I think I'll try this, and I would also like the choc-chip with chick peas, please.

I really like beans and brownies but when I tried this recipe a while ago the two did not mix in my opinion. The bean flavor was to strong. :/

This looks like a great recipe especially for diabetics. Even though the sugar ratio is not that significant, I would sub it with agave or stevia.

Those of you who would like to use chick peas (garbanzo beans), Black Beans are the highest in nutrition of all beans.

Calories 1 cup of black beans (BB 624, chick peas (CP) 729

Black beans have more calcium, iron and magnesium.

Sodium for BB 17mg, CP 48mg
Potassium BB 2760mg, CP 1750
Sugar BB 3.9 grams, CP 21 grams
Fat BB 1.7 grams, CP 12 grams

Just search "nutrition black beans vs chick peas" for the entire nutritional account.

SO I am sold on BB if only for less sugar, fat and sodium and more nutrition.

A couple things CP have more than BB is A, C, B6 and a bit more fiber. I can get these vitamins in other foods too and skip the fat, sugar and sodium.

Any suggestions for substitutions for the peanut butter/nut butter? Allergic. Thanks!

Pretty darn good! I used Kroger Simple Truth Organic black beans (their stuff is relatively low sodium), PB2 (chocolate variety) and high quality cocoa powder. I did not add chocolate chips. Dusted with a tiny amount of powdered sugar. No bean flavor at all and plenty chocolaty! Will most likely make again! Thanks, Lisa!

Just made these. Took about 20 min total and these are DELICIOUS. Cant even taste the beans and it is the perfect mix of cookie and brownie. I also didn't use any sugar because I didnt have any on hand and still plenty sweet. Loved it. Thank you!!

I made them and they tasted very strongly of beans. Did not make again.
