As I finally say good bye to St. Patrick’s Day – I serve what they call a New England Boiled Dinner. Corned beef, potatoes, and carrots boiled for hours and then add the cabbage for one hour.

The slow cooker is the natural place for such a meal because you don’t have to watch it. Corned beef must be boiled for hours before it becomes tender.

In case you have never tried it, corned beef is salt-cured for storage and can be found next to the ham in the meat section of your supermarket.

My recipe features 4 pounds of vegetables and 2 pounds of meat to attempt to make it healthier. It is only an attempt, because corned beef is both fatty and salty. It has a whopping 938 mg of sodium and 14.7 grams of fat per 3 ounce serving, so this is definitely a treat.

I eat a wee bit of corned beef and lots of potatoes, cabbage, and carrots that have been cooked in the meaty juice for a nice flavor. I serve this with mustard on the side and everyone in my family loves it (except for the dog because he doesn’t get any).

It is very important to add the cabbage one hour from the end of cooking so it doesn’t become a pile of mush. You don’t really want to eat mush if you can help it.

Ingredients

1 2-pound corned beef brisket
2 pounds red skinned potatoes, scrubbed and halved
1 pound carrots, peeled and cut into 4 inch chunks
1 bottle beer (optional)
2 cups water or more
1 small cabbage, cut into 4 chunks

Instructions

In a 6-quart slow cooker, mix carrots and potatoes. Place corned beef on top of carrot and potatoes and pour in beer (optional). Add enough water to mostly cover meat.

Set cooker on low for 8 hours.

After 7 hours, use a slotted spoon to remove potatoes and carrots. Add cabbage and cook for the final hour.

Slice the corned beef across the grain and serve with mustard.

Chop up the leftovers to make real corned beef hash. My mom also used to add beets.

We are Polish and French but for years my mother-in-law put on a big corned beef fest every St. Paddy's Day. She decorated and ordered 30 pounds of corned beef from a local specialty market. After my in-laws died, I carried on the tradition......the little red potatos, carrots and cabbage and of course the main event,,,the BEEF. Healthy right????? Not the way my MIL made it.....after it came out of the pot, she covered it with brown sugar and popped it into the oven so it could get glazed in the brown sugar coating. believe me it is delish,,that way, she even glazed the carrots. I carried on the tradition, only I had a small corned beef that I served regular for the ones that are watching their weight and I left out the glaze on the carrots too. Everything was a hit! Happy St. Paddy's Day everyone!

I make corned beef and cabbage every year. We love it and don't skimp on any of the fat as it's a once a year treat. Happy St. Patrick's Day all!

I make corned beef every St. Pat's Day. Yummy!! I just make it on the stove instead of the crockpot because I usually make two 3 or 4 pounders along with all the trimmings and the crockpot isn't big enough. I also throw in whole onions. I love cooked onions. One tip I have is after the corned beef is cooked either in the pot or crockpot, put it in the oven at 350 for a half hour or so and let it crisp up a bit -- looks much more appetizing to me and is soooooo delicious!!

You can find a "lower" sodium corn beef brisket at your local market. If you cannot find it ask for it. They will eventually start to stock it. Still tastes great!

We have corned beef at St.Patrick's Day and occasionally during the year. I always buy corned beef round which is very lean and still very tasty. 4 oz is only 3 pts +

I'm Acadian-Canadian. My mom's ancestors came from France. We do a similar meal that we call a boiled dinner except it isn't with corned beef. We use a roast pork add potatoes, carrots, turnip, green beans, and cabbage. It's one of our comfort meals for sure.
