This healthy potato recipe deserves top billing in your collection of recipes. Easy, delicious, and visually appealing, Hasselback potatoes are the best!

I features potatoes because they are inexpensive, nutritious, and comforting.

Usually to make my potato recipes lighter, I add cauliflower. Check out my potato salad made with cauliflower and Indian spiced cauliflower recipe.

This healthy potato recipe uses the potato, butter, garlic, salt and pepper.

One of my favorite potato dishes is served at San Francisco Giants’ games. There are these “garlic fries” that stink up the ball park. They go great with the common beverage found at the park, hot chocolate (not really). The fog makes it fairly cold to be watching a game, and one time I actually wore a snow parka.

Ahhh, San Francisco summer.

Many of you probably aren’t aware of the quote:

Supposedly, Mark Twain said this, but it turns out that there is no evidence he did. San Francisco residents say this often.

Since I no longer live in San Francisco, I have to make my own garlic fries and I saw this “Hasselback Potato” recipe and decided to give it a try. This looks really fancy, but it is easy to pull off. Line up chopsticks (or the handle end of wooden spoons) under two sides of the potato and cut down until you hit them. It is fast and no peeling!

I like to simply pour garlic all over my potatoes. I’m crazy like that. If you don’t like garlic, skip it.

These are a great way to know EXACTLY how much potato you are consuming and savor your potato experience with lots of slices to slow down your eating.

The healthy part of this potato recipe is the technique. You are slicing it, and roasting it with just a little bit of butter and garlic to bring out the potato flavor instead of piling it high with butter, sour cream, cheese, and bacon bits.

My son likes this recipe because it reminds him of potato chips.

Healthy Hasselback Potatoes Recipe

Makes 4 servings (1/2 potato per serving)

Ingredients

2 large russet potatoes (about 1 ½ pounds)
1 tablespoon butter
1 clove minced garlic
salt and pepper to taste

Instructions

Preheat oven to 425 F.

Line up 2 chopsticks lengthwise close to a potato. Slice across the width in sections as thinly as you can.

Melt butter and mix in garlic. Using a pastry brush or spoon, drizzle the butter garlic mixture into the slices of potatoes. You can open it up like an accordion with your hands. Sprinkle on salt and pepper.

Bake for one hour until golden brown. Serve immediately.

You make this seemingly fancy thing look so possible!!! At our house we would eat this with a big pile of broccoli or kale and a serving of cottage cheese. Thank you so much!!

Easy on the butter, heavy with the garlic and a good sprinkle of oregano! That’s my suggestion. Hassleback potatoes are easy, elegant, filling and delicious! I recommend making them. Use a little butter and toppings of your choice. Enjoy!

Great recipe! We don't use garlic though. Hubby and my grandmother forbade it. :) But, Parmesan and some Kerrygold are delicious. We are big fans of all kinds of cheese. I used to live in San Francisco and Sausalito back in the day. I loved it. As you drive into Sausalito, if you keep going straight, mine was the first house next to a house occupied by members of the Grateful Dead. If you curve around, the road takes you downtown. But, my how things change.

I like garlicky potatoes and Hasselback Potatoes are the best! Drizzle them with olive oil and cover them with fresh garlic cloves and all purpose seasoning!

Just last week I re-discovered the recipes for hasselback potatoes in my recipe notebook, after seeing a recipe for Mediterranean vegetable casserole that used slices stacked vertically, in a grocery store handout. Can’t wait to try the veggies, as well as re-adding hasselbacks to my rotation!

I've loved Hasselbacks for years and ever since starting WFPB have played with other toppings too like olive oil, fresh garlic, italian herbs, capers, chopped olives, mustard, vegan chez sauce, even salsa.
